Gooey Dark Chocolate Avocado Cookies

Ingredients:  
  • 120 grams mashed avocado
  • 100 grams turbinado sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon baking soda
  • 2 tablespoons unsweetened cocoa powder
  • 1 mashed banana
  • 1 teaspoon cinnamon
  • 100 grams whole-wheat flour
  • 100 grams dark chocolate chips

Instructions:
    1. Preheat your oven to 175 degrees celsius, and line a tray with baking parchment.
    2. Mix the avocado and sugar together in a bowl (or a food processor) until they are well combined.
    3. Add the cider vinegar, vanilla, cinnamon, baking powder and cocoa powder, and mix again.
    4. Now mix in the flour until you have a smooth batter. Don’t eat it yet!
    5. Stir in the chocolate chips. If using a food processor, transfer to a mixing bowl for this part.
    6. Using a tablespoon drop the batter onto the baking sheet, and give it a gentle press. The batter won’t spread when you bake it.
    7. Bake for ten minutes, turning the tray around after five.
    8. Leave to cool for another five minutes out of the oven, and transfer your cookies to a cooling rack.
